Ingredients
- 4 fresh fish fillets (bass, trout, or any fresh catch)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 lemon (juice and zest)
- 1 tsp smoked paprika
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
- 1 tsp fresh parsley, chopped
- Salt and pepper to taste
For the Lemon Herb Butter
- 3 tbsp unsalted butter (softened)
- 1 tbsp fresh parsley, finely chopped
- 1 tsp fresh dill, finely chopped
- 1 tsp lemon zest
- A pinch of salt
Instructions
- Prepare the Lemon Herb Butter:
- In a small bowl, mix softened butter, parsley, dill, lemon zest, and a pinch of salt.
- Roll the mixture into a log using plastic wrap and refrigerate until firm.
- Season the Fish:
- Pat the fish fillets dry with a paper towel.
- Sprinkle both sides with salt, pepper, smoked paprika, and thyme.
- Pan-Sear the Fish:
- Heat olive oil in a large skillet over medium heat.
- Add the fish fillets, skin-side down if applicable, and cook for 3-4 minutes until golden brown.
- Flip the fillets and add 2 tbsp of butter and minced garlic to the pan.
- Baste the fish with the melted butter and garlic mixture for another 2-3 minutes until fully cooked.
- Add the Lemon Touch:
- Squeeze fresh lemon juice over the fish and sprinkle with lemon zest for a burst of flavor.
- Serve with Lemon Herb Butter:
- Place a slice of chilled lemon herb butter on each fillet just before serving.
